These couldn’t be easier to make and both kids and adults love them. Feel free to reduce the coconut water by a 1/3 to reduce the sugar content if you wish. Enjoy!
- 1 C coconut water (with no added sugar)
- 2/3 C frozen cherries, (really squish them in to get a good 2/3 C) – you could really use any frozen fruit of choice
- Juice from 1/2 a lemon (optional)
- Blend together and pour into popsicle molds to freeze (be careful not to pour right to the top otherwise they’ll spill out when you go to put the lids on). I use these molds and this recipe typically makes about 4 of these.
