Gluten-Free Sweet Potato Spice Loaf | Tara Thorne Nutrition

Ingredients

Dry:

  • 3/4 C coconut flour
  • 2 TBS tapioca starch
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • ½ salt

Wet:

  • 6 eggs
  • 1/2 C maple syrup
  • 2 TBS coconut oil OR melted butter
  • 1 C sweet potato steamed and pureed (this is the orange not white veggie)
  • 1 tsp real vanilla essence
  • ½ C almond milk – room temperature

Instructions:

  1. Preheat: oven to 375 degrees F
  2. Mix: wet ingredients together
  3. Mix: dry ingredients together
  4. Combine: wet with dry ingredients
  5. Bake: for about 40 – 50 mins or until a toothpick comes out clean
  6. Enjoy!
